Orzotto Pasta Base

Ingredients
1 cup orzo pasta, dry3 tbsp olive oil2 cups fat free chicken broth1/4 cup onion, choppedWater as needed
Directions
Heat oil in large skillet. Add onions and cook until transluscent. Add orzo and toast lightly, until a few grains are golden brown. Add 1 cup of warmed chicken broth, and stir until all the liquid absorbs. Add chicken broth 1/4 a cup at a time, and continue with water until the pasta is al dente and there is a slight 'sauce' remaining in the pan.

Serving Size: makes 4 1-cup servings

    We practically live off this basic recipie when it comes to pasta! I love it so much!! It can be made into a main dish by adding meat and/or veggies in larger quantities, or stay a side dish to something else. YUMMY!! - 9/25/11
