Rita's Ham, Mushroom and Cheese Omelette

Ingredients
2 large eggs1/2 cup sliced mushrooms1 1/2 oz. ham, sliced and chopped1 oz. cheddar cheese, chreddedolive oil spray
Directions
1. Spray pan lightly with olive oil spray.
2. Add mushrooms and ham. Saute over medium heat until mushrooms are lightly browned.
3. Scramble eggs with a little water. Add to frying pan and lower heat. When egg has cooked, top with cheese and allow to melt. Fold over.
4. Serve.
