Basil Pesto Sauce

Ingredients
4 cups fresh basil leaves - rinsed, dried, and packed down(note: 4 cups is the amount after packing down - it's about 6-8 "fluffy" cups)6 cloves garlic (about 2 tablespoons)6 tablespoons pine nuts1/2 cup olive oil (extra virgin is best)salt and pepper to taste1/2 cup grated parmesan cheese
Directions
Blend all ingredients EXCEPT parmesan cheese in food processor. Once pureed, add parmesan slowly and continue blending. If needed, you can add a tiny bit of water for desired consistancy.

This receipe yields approx 1 3/4 cups sauce which works out to 28 - 1T servings.

It freezes really well, so make a batch and freeze in small containers you can thaw as needed.
