whisk eggs well, add milk, oil and butter and continue mixing.
slowly add 1 cup rice flour, whisking or mixing together until lumps are gone. cover and let rest in fridge for an hour or overnight.
Spray skillet with cooking spray, heat until its at medium-high temperature, add 1/4 cup batter to skillet. Wait until brown at bottom and top has bubbles, then turn over.
Serving Size: makes 8 1/4cup pancakes
