1 cup green peppers, diced1 cup chopped onions1 cup fresh mushrooms, sliced3 cups raw potato, red skin preferable1 tbsp extra virgin olive oil1 pat whipped butter
Mix all ingredients in large sauté pan. Cook over medium-high heat until onions are translucent and potatoes have softened a bit. Also pretty good with shredded Pecorino cheese sprinkled on top!
