Pumpkin Chili

Ingredients
1 lb extra lean ground beef45 oz pinto beans (1 lg and 1 sm can each)15 oz black beans (1 sm can)15 oz canned pumpkin (1 can)..do not use pumpkin pie mix15 oz corn (1 can)10 oz Rotel (1can mild or spicy to your taste)1 jar of your favorite salsa1 zucchini chopped fine2-3 Tablespoons Chili powder to tastechopped garlic and onion to taste 1 Tablespoon dark cocoa powder
Directions
Saute beef in a large pot and drain any extra fat (extra has very little to drain). Add onions, garlic and finely chopped zucchini and saute for a minute or 2, then add the remaining ingrediants. Simmer on low for several hours and enjoy. Good to start in the morning on a cold day. May be transferred to a crock pot. I like to top mine with FF sour cream, reduced fat cheese and chives it available.

    Fantastic flavor! I made this for my company's 2nd Annual Chili Cook Off and WON! I added Mrs Renfro's black bean salsa, a teaspoon of crushed red pepper, a dash of cumin, and a dash of pumpkin pie spice - and BAM! This is way better then "the same old boring chili", this was perfect with a hint of - 10/31/15

    Wonderful! I used frozen squash instead of pumpkin (no store had any..) and skipped the corn as my salsa contained corn and it came out great! Reheats like a dream as well. The pumpkin/squash gives a nice earthy undertone to the flavor. This is going to be a staple for sure!! - 9/26/09

    I make this all the time because it is so tasty! I use ground turkey instead of beef, only 15 oz of pinto beans and no Rotel. This brings down the calories so I divide it into 8 servings instead of 12. I also like to dip homemade wheat tortilla chips in the chili to make a filling lunch or dinner. - 2/18/08

    Yummy - I used ground turkey and kidney beans instead of pintos because of what I had at home. I added more veggies and a cup of chicken stock and an extra can of tomatoes since more moisture was needed. The pumpkin and chocolate added great texture and flavor - 12/20/12

    I didn't have several ingredients so I made due. I used diced toms w/grn chilis and another diced toms for the salsa. I used 2 cans black beans(drained) and a can of chili beans, no zucc and used frozen corn. I'm very excited about this recipe. ok, needs tweaking. - 11/6/12

    Very Yummy! I will definitely make this again! I doubled the recipe (yay, now I have some for lunch!), eliminated the corn, used 1/2 ground turkey and used only 45 oz. of beans for the whole doubled recipe.

    This really is incredible! Lot's of flavor. I used my ground venison to make it even more low fat. I also added some broth so it wasn't so thick. I also used my fresh canned corn from last summer. Thanks for sharing! - 5/22/12

    This was not a favorite at our house. I anticipated we'd love it and was surprized -- as most of the ingredients listed fit in our enjoyment range...The spicing wasn't the flavor we like, and I think we missed more of a tomatoe-y taste.     I made this for a group of 11 when we had family in town. Everyone LOVED it! Even hubby, who when he saw the title wasn't even gonna try it!! Good for you, good taste, wasn't too spicy, so the kiddos could eat it. It made alot, so if you don't have a big group you can freeze leftovers. Thanks! - 12/12/08
