Pumpkin Oatmeal Pancakes

1.75 cups uncooked oatmeal15 egg whites1 tsp baking powder1.25 tbsp pumpkin pie spice2 tbsp real maple syrup1.75 canned pumpkin
In a food processor combine oatmeal, egg whites, baking powder, pumpkin pie spice, and maple syrup. Pulse for about 20 seconds. Add in pumpkin and pulse until combined.
Pour 1/4 cup amounts of batter onto 300 degree skillet for about 3 min on each side or until slightly browned.
you can freeze these and reheat in the microwave or toaster.
Serving Size: Makes 14 - 4 inch pancakes
