Chicken Posole

Ingredients
2 1/2 pounds skinless, boneless chicken breast halves2 tbsp Smart Balance Buttery Spread1 Onion, chopped3 Carrots, diced3 Cloves Garlic, minced2 Quarts Chicken Broth1 can Diced Tomatoes1 Tsp crumbled, dried Oregano2 Tsp Salt3 Tbsp Chili Powder, or to taste3 cups White Hominy, rinsed and drained2 Tsp Cumin1 Tsp Pepper
Directions
1. Heat 2 tbsp smart Balance in soup pot over medium heat. Add chicken breasts,season with salt and pepper, cook until the juices run clear. Remove chicken from pot,drain and cool. When cool shred the chicken and set aside. Saute onion, garlic and carrots until tender about 5 minutes. Serve with shredded cabbage, finely chopped onion, chopped cilantro, and lime wedges.

2. Return the chicken to the pot. Add the chicken broth, tomatoes, and seasonings. Bring to a boil, then reduce the heat to low,cover and cook about 90 minutes. Stir in the Hominy and cook until tender, about 15 minutes more. Taste to adjust seasonings, adding more salt and chili pepper if desired.
