Dotty Lemon Cake

Ingredients

1 cup flour¾ cups whole wheat flour2/3 cup sugar2 tbsp poppy seeds1 tsp baking soda½ tsp salt¾ cup water2 tbsp olive oil2 tbsp grated lemon peel3 tbsp lemon juice
Heat oven to 350F.
Mix flours, sugar, poppy seeds, soda and salt in an un-greased 8” square pan.
Stir in remaining ingredients.
Bake 40 minutes.
Cool in pan 10 minutes, un-mould onto wire rack and cool completely.
