Best Chili Ever!

Ingredients
1 lb 93% lean ground beef3 large green peppers chopped (I like it chopped in big pieces- I love green peppers!)2 jalapeños (or more if you like it spicy)1 medium onion, chopped1 or 2 cloves of garlic, mincedCanned diced tomatoes (I use two smaller cans of Dei Fratelli (or something like that) Mexican style diced tomatoes and two of the big cans of the regular diced tomatoes, same brand)4 cans black beansa lot of cilantro3 limessome olive oilsome cayenne pepper and some chili powder
Directions
First, put the olive oil in a large pot, heat it, and then brown the onions and garlic in it (to cook the onions and flavor the oil). Next throw some cayenne pepper and chili powder in to flavor the onions and oil. Then brown the meat in the onion/oil/spicy mix until fully cooked. Then put in the green peppers and jalapeños to soften them a bit (but not too much!) Then throw in the cans of tomatoes and beans (make sure you add the juicy stuff from both the tomatoes AND the beans… that’s where the juice comes from!) and stir it all up. Then put in the cilantro (my philosophy, the more the better!) and stir it up. Then squeeze all the lime juice you can into the pot… chunks of lime falling in are a good thing! Then stir it up again, and lower the heat and let it simmer a while, then serve when you’re ready! It makes enough for an army, or you can keep it for a while and you have meals for a week!

Very good, but use healthier low sodium canned products instead. - 11/9/10

I love this recipe. The longer it sits, however, the spicier it gets. It is great! - 5/20/10

I used this recipe as a "pattern" to follow. I used different amounts of peppers, different kinds of beans & extra spices & herbs- but the cilantro & lime made it POP!! This is DELICIOUS chili & it was very nice to have a change on the tastebuds!! TRY IT!!!! You won't be disappointed- I promise!! - 12/20/07
