Ingredients
1 lb of boneless, skinless chicken breast 1 Can of Great Northern Beans 1 Cup of (warm) water 1 Packet of McCormick's White Chicken Chili season mix 2 Jalapenos (optional)1 Tbsp of olive oil
Directions
Step 1: Have your crock pot out and ready to go
Step 2: heat 1 Tbsp of olive oil in a non-stick pan on medium-high
Step 3: Cube chicken into small bite-size pieces
Step 4: Add chicken to pan and brown the chicken until no more pink is showing
Step 5: Add 1 packet of McCormick's white chicken chili season mix to crock pot. Then, 1 Cup of warm water to the season mix and whisk for about a minute.
Step 6: Add 1 can of great northern beans (with the liquid)
Step 7: Add cooked chicken to crock pot
Step 8: Dice 2 Jalapenos, making sure to get rid of all seeds, and add to the crock pot
*Step 9: Set crock pot to low and cook (covered) for 3 hrs
* It's not necessary to cook this long. However, I found that it gives it a better consistency. You can top it with slices of avocados or a low fat cheese. Enjoy!
