Curried Tuna and Apple Pita

3 oz canned tuna, drained1/4 c. chopped, unpeeled apple2 tbsp Greek yogurt1/4 tsp curry powder1/2 tsp prepared Dijon mustard1/2 tbsp chopped, unsalted peanuts2 small pitas (4" diameter)1/2 c. shredded lettuce leavessea salt, to taste
1. In a small mixing bowl combine the tuna, apple, yogurt, curry powder, mustard, peanuts, and sea salt.
2. Cut your pita in half and split it in the center so it makes a pocket.
3. Line the pita bread with lettuce leaves and spoon in the tuna salad.

I really enjoyed this recipe! I initially saw it in Oxygen magazine and thought how delicious. I have to admit I'm a mayo user so I was very surprised to enjoy the yogurt substitution as much as I did. The mix of apples, dijon, and curry really helped take the emphasis off the mayo taste. - 10/13/11
