Basic Bran Muffin

Ingredients
Directions
2 1/2 c. oat bran1/4 c. brown sugar or 1/4 c. honey or molasses1 1/4 c. milk2 tbsp. salad oil1 tbsp. baking powder2 egg whites
Combine dry ingredients. Add milk, egg whites and oil. Blend together. Bake at 425 degrees for 15 to 17 minutes. Makes 12 muffins.
Other variations: Applesauce and Cinnamon, reduce milk in basic recipe to 1/2 cup. Add 1 cup applesauce and 1 tablespoon cinnamon omit baking powder. Add 1 tablespoon soda to applesauce stir until foamy.
Banana Nut - add 2 very ripe bananas with milk. Mix in blender stir into other ingredients. Makes 12 muffins.
