Quesadilla Filling

1 1/2 c frozen, cubed butternut squash1/2 c frozen corn1 can black beans1/2 lb chicken breast, boiled and shredded1/4 c parmesan cheese1 c monterey jack cheese1/8 c lime juicespices, as wanted/needed
1. Boil/shred chicken in water with salt, pepper and any other spices you like.
2. Boil squash/corn in water with salt/pepper
3. Rinse beans
4. Add everything in 1 bowl and stir.
5. Add lime juice and stir in
6. Add cheeses and stir
Let sit, so flavors smush together.
I served mine between 2 corn tortillas and a spoonful of salsa. On top, I put a cup of romaine lettuce and a mixture of salsa + ranch dressing.
