Sweet Potato Southwest Salad

Ingredients
1 small sweet potato1 small potato1 can southwestern style corn.5 C light sour cream3 T SalsaCilantro
Directions
1) Peel & quarter potatoes, microwave for 4 min
2) Chop potatoes, add to skillet on med heat for a few min to brown either side
3) Add drained corn to skillet, cook a couple more minutes
4) Stir together sour cream and salsa
5) serve with sour cream dressing, garnish with cilantro and cayenne pepper
