Orange Buttermilk Waffles

Ingredients
Dry Ingredients:1 c All Purpose Flour1/4 c Whole Wheat Flour1/8 c Wheat Bran1/8 C Milled Flax Seed1 t baking soda1 t baking powder1/2 c Saco Cultured Buttermilk Blend (dry/powdered)1/2 c Splenda Granulated1/4 t nutmeg1/4 t cinnamonZest of one orangeWet Ingredients:1/2 applesauce, unsweetened1/2 c egg beaters1/4 c fat free plain greek yogurtjuice of orange (1/4 C)1 t orange extract1 t vanilla extract1 1/4-1 1 1/2 c water
Directions
Pre-heat Belgium Waffle Maker, Flip Style, setting 4 or 5.

Blend all dry ingredients in large bowl, whisk to get rid of any lumps. If baking powder is clumping, add to mix after sifting to avoid chunks. By adding orange zest to dry ingredients, the zest gets thoroughly mixed throughout batter.

In separate bowl, mix all wet ingredients, adding only 1 cup of water initially.

Add wet ingredients to dry ingredients, blending only to smooth batter. Add additional water until batter is the consistency of a thin cake batter...too thick will make waffle too heavy.

Spray waffle maker with butter flavored cooking spray before adding batter, 1/4 tp 1/3 c depending on size of waffle maker. Use waffle maker's automatic setting 4-5 or bake 3-5 minutes. If you want a crispier waffle, cook longer but be careful not to burn it.

Don't add too much batter or it will overflow waffle maker--messy.
