Dry Ingredients:1 c All Purpose Flour1/4 c Whole Wheat Flour1/8 c Wheat Bran1/8 c Milled Flax Seed1/4 c Cocoa Powder, Special Dark or regular1/2 c Saco Cultured Buttermilk Blend (dry/powdered)1/2 c Hershey's Special Dark Chocolate Chips or semi-sweet chips1/2 c Sliced Almonds1/4 t nutmeg1/4 t cinnamon, vietnamese1/2 c Splenda GranulatedWet Ingredients:3/4 c egg beaters1/2 c unsweetened applesauce1 t vanilla extract1 t almond flavoring1 t coffee flavoring (optional)1 3/4 - 2 c water2 t lemon juice
Pre-heat Belgium Waffle Maker flip style, 4-5 setting
In large bowl, whisk all dry ingredients except chips and nuts to remove lumps. If baking powder is clumping, sift to remove lumps before adding to flour mixture. Add chips and nuts.
In another bowl, mix eggbeaters with applesauce and flavorings. Add 1 c of water, blend. Add lemon juice and blend.
Add wet ingredients to dry ones and mix, adding water until batter is thin cake mix consistency.
Spray waffle maker with butter flavored spray and add 1/4-1/3 c of batter, smooth to edges. Close lid and flip. Use automatic settings or cook 3-5 minutes until crispy.
Be careful not to over load waffle maker or batter will leak out--messy.
Serving Size: Makes 5-6 6 inch waffles.
