Chocolate Eclipse

2 T butter2 oz unsweetened chocolate2 c sour milk1 tsp vanilla2.5 c unbleached white flour2.25 c packed brown sugar3 tsp baking powder1 tsp baking soda1/2 tsp salt1/2 c plus 2 T unsweetened cocoa2 1/2 c boiling water
Preheat oven to 350. Grease 9 x 13 pan.
Melt butter and chocolate together (I use the preheating oven).
Heat sour milk gently until a little warmer than body temperature (don't boil or cook). Combine with chocolate mixture and vanilla. In large bowl, combine flour, 1 c brown sugar, baking powder, soda, and salt. Mix well, making as uniform a mixture as possible.
Pour in wet ingredients and stir until well combined. Spread into prepared pan. Combine remaining 1 1/4 c brown sugar and cocoa and sprinle over top of batter evenly.
Pour on boiling water and place in preheated oven. Bake 30-35 min until center is firm to the touch.
Cool for at least 15 mins. Serve hot or at room temperatue. (with ice cream or frozen yogurt)
