Cauliflower Fritters

2 c roughly chopped cauliflower (steamed)1 clove garlic chopped1/2 c whole wheat flour 1 egg1/4 c. shredded parmesan1/8 c. parsley, finely chopped1/8 c hot watersalt and pepperoil spray
In a loarge bowl, combine cauliflower, flou, garlic, eggs, cheese, parsley, salt and pepper. Add water so that batter becomes slightly more dense than pancake batter.
Heat pan on medium low and spray with oil. Use 1/4 cup measure to measure out fritters. Cook until brown, turn and cook few more minutes.
