Indian Chicken Curry

1 1/2 lbs. chicken breasts, cut into 1-inch pieces1 T. canola oil1 onion, diced3 garlic cloves, minced1 T. curry powder1 t. ground ginger1 (2 lb) head cauliflower, cut into florets1 can coconut milk1/2 c. chicken broth1 t. saltblack pepper to taste
Heat canola oil in a large skillet over medium-high heat. Cook chicken until browned. Transfer to a plate. Add onion and cook for a few minutes, then add garlic, curry and ginger. Cook for two minutes, and then add cauliflower, coconut milk and broth. Cover and simmer for about 10 minutes. Add chicken back to pan and cook until sauce is thickened and reduced, about 5 minutes.
