Hearty Ham, Cheese, Rice and Broccoli Casserole

4 cups cooked medium grain brown rice (for fiber and protein)2 cups chopped broccoli (for a vitamin and fiber kick)1 cup chopped ham (you can subtitute lean for a lower calorie choice)2 cups shredded cheddar cheese (for calcium and flavor)1/2 cup reduced fat sour cream1/2 cup low-fat/fat-free cream of broccoli soupItalian-style bread crumbs(seasonings to taste, but watch extra salt, because ham is naturally salty!)
Note: Prep time includes cooking the brown rice
While cooking brown rice, prepare the other food. Shred the cheese, chop the broccoli and chop the ham. When rice is done, combine in a LARGE casserole dish the rice, ham, cheese, broccoli, sour cream and soup. Mix well. On top of the mixture, add the bread crumbs.
Cook covered at 425 degrees for 1/2 hour. Serves 10.

Substituted mushroom soup for broccoli soup, and added a little water/milk to the casserole before baking and it wasn't dry - turned out very nice (baked at 350 for 45 minutes with something else that I had baking at 350). Very good - added to my recipe book! Thanks for sharing this recipe. - 8/6/10

This was delicious!! I think in the future I will add a little milk as suggested, the edges did turn out a little bit dry, but otherwise this dish was wonderful, very satisfying, and super filling. Definitely worth putting on the calorie counter, and great for "sneaking" in the veggies! - 10/2/12

My kids and I enjoyed this recipe, but my DH did not. I altered the recipe some because I was trying to get rid of some left-overs. I increased the ham to 2 cups, the broccoli to 3 cups and the broccoli soup to a full can. I used reg. sour cream and decreased the cheese to 1 cup. Turned out well. - 12/31/11

It tasted pretty good, but I give it 4 stars because it wasn't as filling as I was hoping from the description. Granted, we used it as our main meal, and not a side... Probably would be better as a side. My husband and I ended up getting 2 servings to fill ourselves up, and we are not big eaters! - 1/24/11
