Scrambled Egg with Onion (2 Egg Bhurji)

Ingredients
Egg, fresh, 2 medium Onions, raw, 2 tbsp chopped Red Ripe Tomatoes, 0.5 large whole (3" dia) chopped finely Parsley, 0.6 tbsp *Canola Oil, 1 1tspSalt to tastePepper to taste
Directions
Heat the oil in a wok and fry the onions till translucent. Add the finely chopped tomatoes to the skillet and fry till they are cooked and soft ( about 2 - 3 minutes). Add salt & pepper as per taste.

In a bowl whisk the eggs till frothy and add to the onion mix in the skillet and stir briskly till eggs are cooked and crumbly. Mix well to ensure the onion mix and eggs are incorporated well and remove to a bowl. Garnish with fresh finely chopped coriander or parsley leaves and serve.

For using this as canape topping...spoon the mixture over canapes ...add 1/4th tsp of mozarella cheese on each canape and put in the microwave for 15 secs just before serving. garnish with a spring of coriander for colour
