Apple Strudel Breakfast Cereal

Ingredients
1/4 cup sliced almonds1 cup quinoa2 1/2 cups water1 apple diced1/4 cup dried cranberries1 tsp cinnamon1 tsp vanilla extract1 tbsp brown sugar
Directions
Place almonds in a saucepan over med-high heat. Stir frequently until the almonds are toasted. Set aside.

Combine the quinoa, water, apple, cranberries and cinnamon in same saucepan. Bring to boil, cover and reduce to a simmer for 17 minutes. Stir in the vanilla and brown sugar. Divide between bowls and top with almonds.

Serving Size: Makes 4 servings, approx 3/4 cup each
