SF Carrot Muffin Recipe

Ingredients
1 cup whole wheat flour1 cup whole wheat pastry flour1 Tbsp baking powder1 tsp baking soda1/2 tsp salt2 tsp cinnamon1 cup unsweetened applesauce3/4 cup raisins1 cup grated carrot, packed2 Tbsp lemon juice1/3 cup canola oil1/2 cup FF milk1 Tbsp flaxseed, ground1 tsp vanilla extract
Directions
1. Preheat oven to 375 degrees F
2. Oil 12 serving muffin pan
3. mix dry ingredients and let stand for few minutes
4. Soak raisins in boiling water for 5 minutes, then dry through a sieve
5. Grate carrots
6. Chop walnuts
7. Measure applesauce
8. in separate bowl, combine place the raisins and walnuts with boiling, hot, water and stir'
