Boiled Plantain Mofongo

Ingredients
3 Platanos Verdes, pealed and cut in to 4 chunks each4 Slices Turkey Bacon, Chopped Finely4 Slices Canadian Bacon, Chopped Finely1/2 Cup Canola OilGarlic Powder to Taste (approx 2 TB)
Directions
Boil plantain chunks in salted water for about 20mins.

Heat Oil over Med/High and Fry Bacon pieces

When both are done cooking, Drain Plantains and place in to large bowl.

Mash plantains and pour bacon and oil in to the mashed plantains. Sprinkle w/ garlic powder and mash again, mixing ingredients well.

Form in to approx 8 small balls.

Serving Size: Makes 8 small formed balls
