Chicken Salsa

Ingredients
boneless, skinless chicken breastsYour favorite salsacauliflowerfat free cheddar cheese or reduced fat (your choice or optional)
Directions
Put some salsa in a baking dish
Place chicken breast(s) in baking dish on top of salsa
Add more salsa
cover with foil
bake at 375* until chicken if done (time will vary depending on thickness of chicken)
Chop head of cauliflower fine (like rice)
place in non-stick skillet
saute in small amount of water until tenderness you prefer. Only takes me a minute or two.


I like it with a little crunch, not mushy
.
To serve, place cauliflower on plate and top with chicken and salsa.
Sprinkle with cheese and enjoy!!
