Udon Noodles w/Veggies

Ingredients

Chikara (or similar brand) Udon Noodles package2T Dried shrimp1 cup napa cabbage, sliced1/2 cup snap peas1/2 cup carrots, diced or pre-purchased matchstick1t olive oil1T cilantrojuice of half a lemongarlic powdersalt & pepper
Add olive oil to pre-heated skillet.
Saute all vegetables, except cilantro, until soft. About 5-6 minutes.
Remove vegetables and set aside.
Follow instructions on noodle package to stir fry. (The instructions call for oil but I just use a non-stick skillet and the residual oil from the vegetables.)
Noodle package includes a soup base. Make this sauce while noodles fry.
Once noodles are fried, 2-3 minutes, add sauce and vegetables back into the skillet.
Heat through and finish with lemon juice, salt and pepper.
Garnish with cilantro.
