Savory Pumpkin Mac & Cheese

8 oz. uncooked whole wheat pasta1 cup pumpkin puree1 cup skim milk2 oz. Neufchatel cheese4 oz. 50% reduced fat sharp cheddar cheese2 oz. grated Gruyere or Monterey Jack cheese1/8 tsp ground nutmeg1/8 - 1/4 tsp cayenne1/8 tsp black pepper
Cook pasta.
Combine pumpkin and milk in saucepan, and whisk over medium heat until hot. Reduce heat and whisk in cheeses until melted.
Add spices and cooked pasta.
Remove from heat and allow to thicken (if necessary).
Optional - serve with additional nutmeg
