Calico Beans - reduced fat, sodium

1/2 lb extra lean ground beef (4% fat)6 slices of turkey bacon (reduced sodium if you can find it)1/2 cup chopped onion1/2 cup Heinz reduced sodium ketchup1 tsp dry mustard2 tsp white vinegar1/2 cup brown sugar, packed (could also use the splenda blend here and save more calories and carbs)2 cups red kidney beans (made from dry)2 cups Northern beans (made from dry)2 cups butter beans (made from dry)
Prepare the dry beans for a cooked recipe according the package directions. (you can also use sodium free canned beans)
Cook bacon until crisp.
Cook beef until no longer pink
Combine onion, ketchup, mustard, vinegar and beans in a 3 quart container
Mix well
Add beef and crumbled bacon
bake at 350 degrees for 40 minutes.
Serving Size: Makes approx. 12 1/2 cup servings

Not as good as Grandma's but couldn't find it. I used what was on hand: dried black, kidney, pinto and lima beans along with 3 slices uncured bacon (no nitrites/nitrates), a bit of salt pork, chorizo, tomato sauce, small can of diced tomatoes and liquid smoke. Not mushy like using canned beans! - 9/8/15
