Turkey Chili Mole (Chocolate Chili)

Ingredients
1.5 Cup Chopped White Onion1 Cup Chopped Green Pepper3 Cloves minced garlic1tsp diced canned red Jalepeno more for heat1 Tbs of Ground Cumin1tsp Black Pepper1 tsp ground garlic powder2 tsp salt1tbs of Mole Base, Mexican condiment or4ozs Mole sauce2 cups Chicken Broth1 14.5 Canned diced Tomatoes =3.5 Cups2 Cans Drained Pinto Beans2 lbs of Ground Turkey2 cups uncooked Whole Grain Brown Rice4 Cups Water4 Tbs of Olive Oil
Directions
Note: Mole Base comes in a small jar found in the Mexican condiment section, its much easier than making a mole sauce which has a base of dark chocolate.

Sautee garlic, onions, pepper, jalepeno in 2 tbs of olive oil. Just as they begin to soften add the tbs of cumin. It will begin to brown and stick,thts a good thing. Continue to sautee about 3 mins.

Add 2 cups of chicken stock or broth (may use beef) to deglaze pan. Add mole base and stir in untill dissolved. Season with half the salt pepper and garlic.

Add one small can of of tomato paste and dissolve. Add 1 cup water Add Addition tsp of cumin

Brown turkey and add to pot. May need a little salt to taste

Cook the brown rice according to directions.

Crush 2 ozs of tortillia chips and stir into mixture. Simmer 5 mins. Serve over brown rice
