1 Egg1 Small Onion125g Frozen spinich4 tsp Parmasan60-100g Feta cheese2 Sheets of vegetarian flaky puff pastry1 Tbsp milkSalt & pepper
-Thaw filo pastry and frozen spinich to room temperature.
-Mix beaten egg, feta, parmasan, spinich (drained of water), diced onion, and seasoning in a bowl.
-Cut each pastry sheet into 4 squares (making 8 squares).
-Place about a tablespoon of mixture in the centre of each square.
-Brush edges with milk and fold pastry to form a triangle.
-Crimp edges with a fork to seal, and pierce pastry in the middle to allow steam to escape.
-Place on a greased tray, bush lightly with milk and bake at 200C for 15 minutes or until golden.
Serve warm or room temperature with a side salad.
