Orange Tofu Stir Fry w/ Brown Rice (Curves)

6 oz tofu1/3 cup(s) orange juice2 tsp(s) cornstarch1 tsp(s) chili garlic sauce1 tsp(s) ginger- fresh1/2 bell pepper(s) - your choice1 1/4 oz mushrooms2 tbsp(s) vegetable broth - reduced sodium 1.7 oz brown rice (dry)
1. Grate fresh ginger. Cube tofu and marinate in ¼ C orange juice, cornstarch, chili garlic sauce and ginger for 1 hour.
2. Cook brown rice according to package directions.
3. Chop bell pepper and cook with mushrooms in vegetable broth and 2 T orange juice in a pan. Add the tofu and the marinade to the pan and cook over high heat to the desired degree of doneness.
3. Serve with brown rice.
4. Tips:
1.7 oz = 1/4 cup dry = 3/4 cup cooked brown rice
1/2 whole = 1/2 cup bell pepper
1 1/4 oz = 1/2 cup mushrooms
