Low Fat Zucchini Bread

Directions
Dry:1 C All Purpose Flour1 C Whole Wheat Flour1/2 C Brown Sugar1/2 tsp Baking Soda1/2 tsp Baking Powder1/2 tsp Salt1 tsp CinnamonDash NutmegWet:1 Large Egg, beaten2 tbsp Melted Butter1 C Unsweetened Applesauce1 1/2 C Shredded Zucchini (loose, not dry but most of the liquid squeezed off)1/2 C Walnuts (optional)
Preheat oven to 325 degrees.
1. Combine dry ingredients, mix well.
2. In a separate bowl, combine wet ingredients, mix well. Add walnuts if desired.
3. Fold wet ingredients into dry and stir until just blended.
4. Pour into greased bread pan (used 9x5) and bake 45-55 minutes.
*For muffins, bake 25-30 minutes.
