3 whole eggs3/4 c. Half and Half3/4 c. Skim Milk1/2 c. Chopped Parsley1 1/4 c. Smoked Salmon1/2 c. Colby Jack Cheese, shredded1/2c. Part Skim Mozzarella Cheese, grated1 1/2 c. Oven Roasted VegetablesSalt & Pepper to taste
Pre heat oven to 325 degrees. Spray 9" round pie or cake pan with olive oil cooking spray. Beat eggs. Add half and half and milk, beat. Add all remaining ingredients and stir. Pour into prepared pan and bake 45 minutes or until center is firm and knife comes clean.
