Slow Cooker Potato Soup with Ham

2 tbsp. unsalted butter1/2 cup all purpose flour1 large onion, sliced or to taste2 cups 2% milk8 medium potatoes, chopped4 oz. diced ham6 tsp dried parsley6 cups water2 tsp salt free chicken bouillon1 Tbsp. instant tapioca
Place everything in slow cooker, except milk, tapioca, and flour. Cook on low for 8 hours. About a half hour before it is finished add milk, tapioca, and flour. It must boil for tapioca, so adjust time and temperature accordingly.
