Crockpot Stuffed Poblanos

Ingredients
6 poblano peppers1 lb ground beef1/2 c chopped celery1 c chopped onions5 cloves minced garlic3 dashes (or to taste) black pepper1 tsp ground cumin seed1 can diced tomatoes, divided1c shredded Monterey Jack cheese
Directions
Slice tops off of peppers and remove seeds and pulp. Mix
ground beef, celery, onions, garlic, pepper, cumin, and 1/4 cup of the tomatoes together. divide mixture evenly a nd stuff the peppers. Arrange stuffed peppers in the crockpot and pour remaining tomatoes over them. Cover, cook on LOW 8-10 hours.
