Mole Sauce, quick and easy

Ingredients
1/2 cup of low sodium V8 juice1/4 cup of chopped onion1/4 cup of chopped green pepper1 teaspoon olive oil1 teaspoon chili powder1 teaspoon cocoa powder1 teaspoon minced garlicsalt to taste 1 pinch of dried cilantroa splash of lime juice to taste
Directions
In a nonstick saucepan, heat the olive oil over medium high heat. Add the onion, green pepper, and garlic. Saute until soft. Add the cocoa and chili powders. Stir to fry until fragrant about one minute. Add the V8 juice and stir constantly, and simmer about 5 minutes. Add the lime juice and cilantro. Use this sauce to pour over cooked meat or put browned meat pieces into this sauce, simmer with a lid until the meat is tender. Delicious!

Serving Size: Makes 2 servings. Enough sauce for two pieces of meat.
