Eat Clean Whole Grain Pancakes

Ingredients
Unsweetened Almond Milk, 2 cupWhite Vinegar, 2 tspOats, .5 cup Yellow Cornmeal, .25 cup Egg Beater, Liquid Egg Substitute, 0.25 cup Whole Wheat Flour, 0.75 cup Soy Flour, .25 cup (can substitute whole wheat)Flax Seed Meal (ground flax), 3 tbsp Baking Powder, 1 tsp Baking Soda, .5 tsp Vanilla Extract, 1 tsp Cinnamon, 1 tsp
Directions
Add 2 tsp to 2 cups of almond milk and set aside for 15-20 min (to make buttermilk). Mix all dry ingredients. Add egg substitute and vanilla; add buttermilk and stir until moistened. Batter will be runny. Drop by approx 1/8 cup fulls (I used a coffee scoop) onto hot skillet coated with cooking spray. Cook on one side until air bubbles surface and pop. Top with fresh berries, sugar free syrup or natural peanut butter!
