3-4 medium carrots, peeled and grated2-3 overripe bananas, mashed1 cup applesauce1 1/2 cup brown rice protein1 cup buckwheat flour1/4 cup rye flakes1 T baking powderOPTIONAL: add cinnamon and nutmeg to taste
1. Preheat oven to 350. Line muffin tin with baking cups or very lightly grease tin with lite spray.
2. Combine all ingredients except the rye flakes and mix until fully blended.
3. Pour batter into baking cups, and top with rye flakes.
4. Bake for 12-15 minutes. Muffins are done when tops fully expand.
Serving Size: Makes 20-25 small muffins of about 1 oz each
