Plum Lamb Stir Fry

1 chicken stock cube400g lamb fillet, sliced thinly across the grain1 brown onion, thinly sliced1cm piece of ginger, grated1/3 cup plum jam1 tblspoon soy sauce1/4 chinese 5 spice100g snow peas, trimmed thinly slicedother vegetables of choice
Dissolve stock in 1/4 cup hot water. Heat a wok over high heat and spray with oil. Add half the lamb and stir fry 2 minutes. Transfer to bowl and cover to keep warm. Repeat with remaining lamb.
Spray wok with oil and stir-fry onion and ginger. Stir fry for 2 minutes. Add stock, jam, soy sauce and five spice. Bring to boil. Return meat to wok and add vegetables, stir fry til bright green. Serve with rice.
