Tofu Quiche, no crust, mom's recipe

Ingredients
10oz package frozen spinach, thawed and drained of excess liquid6-8oz tofu2-3 eggs1 Tbsp olive oil1 medium onion chopped12 button mushrooms sliced1/2 cup milk (2%)3-4 oz parmesean or other cheese shredded1tsp lemon juiceblack pepper and nutmeg to taste
Directions
Preheat oven to 350

1) coat inside of 9*9 pan with small amount of olive oil

2) Saute onions and mushrooms in remainder of olive oil until brown and liquid has evaporated

3) In food processor blend tofu, spinach, eggs, milk, 3 oz cheese, lemon juice and spices

4) layer onions and mushrooms with into pan with spinach tofu mix, with the top layer being spinach. Top with remaining cheese and black pepper

5) Bake at 350 for 45 minutes or until firm. The quiche gets firmer and tastes better as it cools.
