Pumpkin bisque with wild rice

Ingredients
2 cups chopped white or yellow onion1 28 oz. can pumpkin3.5 cups water4 cups chicken broth1 tsp ground cumin1 tsp dried oregano2 15 oz. cans white beans3/4 cup wild rice2 tsp cooking sherry, optional1/2 cup half & half1/2 dried parsley
Directions
combine all ingredients, except cream and parsley, in 5-6 quart crockpot. Cook on high heat setting 3.5 hrs or low for 7 hours. Ten minutes before serving, stir in cream; cover to heat through. Sprinkle with parsley before serving.

    This was a very tasty, filling soup. My husband was a little skeptical, but he really liked it. My crockpot didn't have enough room for all the water, but we enjoyed the thicker texture. May add a little more seasoning next time. Looking forward to leftovers for lunch! - 10/22/12
