Fruit and Oatmeal Muffins (dairy free)

1 cup oatmeal, ground fine you can do this in a food processer or even a blender1 1/2 cup whole wheat flour2 tps baking powder1/4 cup brown sugar1/4 cup granulated sugar 1 egg1 tps vanilla3 Tbs oil1 Cup Almond milk1 1/2 tps ground cinnamon2 cups fruit pureed, our favorites are apple and banana, mixed berries and even pumpkin
Pre heat oven to 350 degrees
Mix together oatmeal,flour,baking powder, sugars and cinnamon.
In a small bowl mix the almond milk, egg, vanilla and oil. Add to the flour mixture and blend well. Fold in the pureed fruit. Once all ingredients are mixed well pour in to 18 greased or lined muffin tins.
Bake for 20-30 min, until a toothpick inserted it to the center of a muffin comes out clean
Serving Size: Makes 18 regular sized muffins
