Pumpkin, canned, without salt, 2 cup Canned Tomatoes, 1 canBeans, black, 2/3 cup Beans, red kidney, 2/3 cup Chickpeas (garbanzo beans), 2/3cupOnions, raw, 1 cup, choppedPeppers (green), 1/2 cup, choppedPeppers (orange/yellow/red) 1/2 cup, choppedGarlic, 1 cloveSummer squash, .5 mediumChili powder, 1.5 tbsp Pepper, black, 1 tspSalt, 1 dashCheddar Cheese, shreddedSour Cream
On medium skillet, sautee garlic, onion and peppers. Add mixture to slow cooker and mix in beans (canned or previously soaked), pumpkin puree, spices, and squash. Cook on low heat approx. 4-5 hours. Top with cheddar cheese and sour cream.
