Jamie Eason Cheesy Lemon Protein Bar

Non-fat no-stick spray1 ½ cups quick cooking oats2 scoops vanilla whey protein powder (look for a low sugar, low fat and low carb variety)1 tub if Crystal Light Lemon Drink Mix (or other lemon drink mix -True Lemon works great)½ tsp baking soda¼ tsp salt4 egg whites½ cup Ideal (Xylitol – baking) or Splenda1 4 oz. jars or packs of baby food applesauce¼ cup Lactaid fat free cottage cheese1 4 oz baby food jar of water (use low sugar yogurt for creamier version)
Preheat oven to 350 degrees. Spray an 8 x 8 pyrex dish with non-stick butter spray.
In a large bowl, mix egg whites and sweetner until frothy. Add baking soda, salt, baby food, cottage cheese, lemon drink mix and water until well combined. Add the oats and protein powder and mix gently.
Pour batter into the pyrex dish and spread evenly. Bake 20 - 22 minutes or until a toothpick comes out clean. Let cool and cut into 16 pieces – 4 x 4.
