Jen's Trimmed Down Apple Cake

Ingredients
1/2 cup canola oil1/2 cup apple juice1 1/2 c sugar1/2 c egg beaters1 tsp vanilla extract2 c white flour1 c Old fashioned 7 grain cereal (or Oats), ground in food processor3/4 tsp nutmeg1 1/2 tsp baking soda3 c apples chopped and peeled
Directions
Preheat oven to 325 degrees. Mix wet ingredients with mixer. Mix dry ingredients in separate bowl then add to wet ingredients in 2 batches mixing after each. Fold in apples. Spray bundt or tube pan and pour batter in. Bake one hour. Let cool before removing from pan.
