Single Muffin

Ingredients
3 Tablespoons flour1/16 tsp salt1-1/2 tsp coconut oil1 Tablespoon plus 2 tsp liquid (water was used, but feel free to use nondairy milk)1/4 tsp vanilla extract1 tablespoon baking powderSweetener (3 packets of your choice)
Directions
Mix all of the ingredients and pour into a sprayed dish or coffee mug with canola oil spray.
Microwave for 90 seconds, or 110 seconds.
For variations, add chocolate chips, dried fruit, nuts, fresh or frozen berries, spices, cocoa powder, candies, veggies, or savory foods to the batter to create whatever muffin you want.
