3 cups green peper, diced1 medium onion, diced4 stalks celery, diced2 Tbs Olive Oil1 pkg Morningstar Farms Meal Starter Cumbles1 cup uncooked barley1 28oz jar marinara sauce2 cups water2 small cans V-8 juice (about 2 cups)Salt and Pepper to taste
Saute pepper, onion & celery until soft in the olive oil. Add crumbles, barley, marinara sauce,(using 1 cup water to rince out jar, diced tomatoes (using 2nd cup water to rince out can) and V-8. Simmer for 1 hour or until barley is cooked. If the soup is too thick, add the additional cup of water or addition V-8.
