Quinoa Salad with Cumin-Scented Vegetables

1 pkg PC Organics Quinoa2 tbsp 25 ml PC Organics Olive Oil1.2 cup 125 ml diced carrot1.2 cup 125 ml diced onion1.2 cup 125 ml diced sweet red pepper2 cloves garlic minced2 tsp 25 ml ground cumin2 tbsp 25 ml chopped fresh parsley1.2 tsp 2 ml salt
in small saucepan, bring 2 cups 500 ml water to a boil. Stir in quinoa. Reduce heat to LOW and simmer, covered, for 15 minutes. Remove from heat and let stand 5 minutes. Fluff with fork.
In large frying pan heat oil over MEDIUM HIGH heat. Cook carrot, onion, red pepper, garlic and cumin for 10 mines, stirring frequently, or until vegetables are tender. Stir in cooked quinoa, parsley and salt. Serve salad hot or cold.
