Eggplant & Steak Stir Fry

1.5 lbs. of steak, cubed1 large eggplant, cubedSerrano pepper, diced1/2 red onion, diced1 can of black beans, drained1 c. diced mushrooms3 cloves of minced garlic1 tsp. grated ginger2 tblsp. mirin2 tblsp. tamari or soy sauce
Heat 2-3 tblsp. of cooking oil in your skillet, then add the beef and brown before reserving to a bowl.
In the skillet, add a bit more cooking oil if needed, then add the eggplant, onions, garlic, ginger, serrano pepper, and mushrooms. Stir fry under medium-high heat for 5-6 minutes, then return the beef and add the beans, soy, and mirin and stir fry for another 4-5 minutes, then serve.
